Cold Cucumber and Melon Soup with Extra Virgin Olive Oil
• 2 cucumbers
• 1/2 melon
• 2 plain yogurts
• 1 clove garlic
• Spring onion
• Extra virgin olive oil from Europe
• Goat cheese
1. Peel the cucumbers and the melon and add them together with the rest of the ingredients in a blender.
2. Crush well and let cool for at least two hours.
3. Add salt to taste.
4. Decorate with pieces of melon, crumbled goat cheese, chopped chives and a splash of extra virgin olive oil.
