Season tomatoes salad with fresh cheese and evoo snow cone vinaigrette By Periko Ortega
Ingredients
• 200 gr of seasonal tomato
• 30 gr of fresh cheese of your choice
• Salt
• Pepper
• Mint leaves
For the snow cone vinaigrette
• 20 gr vinegar montilla moriles
• 20 gr water
• 5 gr salt
• 75 gr evoo
• 5 gr sugar
• 5 gr mustard
Preparation
1. Emulsify all the ingredients in the vinaigrette and freeze. grate to make the snow cone
2. Cut the tomato with skin and place on a dish with add salt an pepper to taste, add the fresh cheese and the mint leaves
3. Place the frozen evoo vinaigrette on top of the tomato.
