Chicken Fajitas
Ingredients
For the fajitas:
• Two chicken breasts
• One onion
• One red or green pepper
• Four flour or corn tortillas
• A tablespoon of paprika
• A pinch of cumin
• Two limes
• Olive Oil from Europe
• Extra Virgin Olive Oil from Europe
• Salt
• Pepper
• Grated cheese
For the sauces:
• 10 or 15 cherry tomatoes
• Three avocados
• Fresh cilantro
• One lime
• Salt
• Pepper
• Yogurt
• Chives
• Onion
• Extra Virgin Olive Oil from Europe
• Half serrano pepper
• Half green pepper
Preparation
For the fajitas:
1. Cut the chicken, onion and pepper into strips. We put the strips in a container together with the cumin, the paprika and the juice of half a lime.
2. Add the salt, pepper and extra virgin olive oil.
3. We heat olive oil in a frying pan and add the chicken, onion and pepper, stirring well for approximately ten minutes, until we see that everything is golden brown.
4. Fajitas are usually accompanied by various sauces, which we can prepare while the chicken and vegetables are cooking. We suggest you make one of yogurt, one of tomato and the famous guacamole.
For the yogurt sauce:
1. We just have to mix the yogurt with a little chive, pepper and a little lime or lemon.
For the tomato sauce:
1. Chop the cherry tomatoes, chop the cilantro and pour it into a container together with the salt, pepper, lime juice and a splash of extra virgin olive oil from Europe.
2. We remove everything well.
For the guacamole:
1. Put the onion, pepper and cilantro in small pieces in a blender.
2. We remove the meat from the avocados, pour it into the blender and mix.
3. Add the medium chili and lime juice and crush everything well until there is a greenish paste.
Presentation of the plate:
1. We heat the corn or flour tortillas for one minute, or as long as the manufacturer estimates, on a comal (for tortillas) or in the microwave.
2. We put them on a plate together with the sauces and the filling so that each one can served themselves what they want.
